
Now that we're 30-year-old parents with careers its all about what's quick and easy for dinner. Sure, we still like the finer (and more time consuming) things about food, but good flavor and good ingredients can make the 10 minutes you spend on this meal worth it.
- Buy really good pre-made flatbread: We shop at Kroger, so its usually over in the bakery.
- Buy really good jarred pesto: I like Classico.
- Buy ripe Roma tomatoes: Or grab what looks good.
- Buy fresh mozarella: You know, the soft kind that comes in a ball.
- Put sliced mozarella on the flatbread and stick under the broiler for a few minutes.
- Drizzle with the pesto.
- Top with sliced tomatoes.
