Baby it's cold outside! If I weren't such a home body and on a two-week vacation from work, I'd make my way out to Heights Taco & Tamale Co. and have the Verde Enchiladas. Pick between corn, zucchini and squash or chicken, either topped with a green chile-tomatillo sauce and all the jack cheese you can handle. I went light on the sides with the tomato, cucumber and mint salad and the rice. That makes this healthy, right? And check the cast-iron skillet they come in. Yummy!
